I don't eat pork...ever. What is a good mix ingredient for beef sausage? Maybe turkey?

Never tried turkey. I use wild hog or deer meat or both together. This is really good seasoning.

What is the difference between the blend numbers? I see a #6 and #10

#10 is their original seasoning and most popular flavor that works well both as a breakfast or an anytime sausage. It has a relatively high level of sage, red pepper and black pepper. All the other seasonings are based off the #10 with slight adjustments for preferred tastes. #7 is the same flavors/ingredients as #10, just a slightly toned down version for spice levels. #6 has less black pepper and no crushed red pepper for those who want a very mild sausage. #NS4 has the sage removed but everything else the same as #10. #29 has no sage and a bit less pepper. So essentially, spice level is #10, #7, then #6 the most mild. NO sage options are #29 and #7 with #7 being the most mild.

Anyone use this to make turkey sausage or chicken? I gave alpha gal and can no longer eat red meat. The precooked turkey sausage in the store is blah!

This is excellent for making chicken sausage patties. It is delicious. I’ve used it for over two years now. A little goes a long way I do however use a little bit of brown sugar and crushed red pepper occasionally.

Is Legg’s pork sausage seasoning gluten free?

There are no gluten ingredients in this mix. It is packaged on shared equipment, BUT, they thoroughly clean, sanitize and test the equipment between processing gluten containing and GF mixes.
