Fine cocoa and delicious chocolate with grains of raw brown sugar on the surface: "Signor Ciok" is made with less refined flour, a particular flour obtained with a lower grain refining process, that allows the use of the external parts of the grain, preserving some precious parts. Flour are classified in five types, depending on their degree of refining: 00, 0, 1, 2 and wholemeal, from the more to the less refined. "Signor Ciok" is made using type 2 flour, which provides an intermediate level of refining and is more rich in bran part than 0 and 00 flours.
