Product description Irish moss (Chondrus crispus), also known as carragheen, is a red algae or seaweed which grows along the rocky parts of the Atlantic coast of Europe. Irish Moss contains nearly 10% protein and about 15% mineral matter, it is rich in sodium, potassium, calcium, magnesium, iron and vitamins A, C, D. In food production it is used a source of carrageenan which acts as an emulsifier and thickener in sweet deserts, ice-creams, shakes, mousse, pies and even toothpaste. Medicinally it has been used to soothe mucous membranes irritated by coughs and intestinal problems. Irish moss is suitable for vegans and vegetarians and is used as an alternative thickener in place of gelatin, however it does grow wild along the coast so may have been in contact with shellfish and crustaceans.
