What is the expiry date on these if I buy today?

There is definitely a taste difference when used well before "sell buy date." I would call the co. 877 295 9604. BTW, the nutritional info. is incorrect as well.

Is dark chocolate used?

It is dark chocolate but it is not unsweetened. So it is sweetened dark chocolate.
