What is the compatible ratchet driver size?

As previous... The internal is 12mm and if using a socket with ratchet it's 23mm. Check the diagrams on the product page.

Will this work on a Shimano 105 11 speed cassette?

yes no problem it contains the Shimano specific sproket.

do I need a torque wrench ?

No, but be aware the cassette can be pretty well on the wheel. I braced the wrench, and moved the wheel by the rim.
