Am I missing something? I connected this to my electric guitars and only got mono. I expected stereo.

The output jack of 98% of electric guitars has a hot signal on the tip and a ground on the sleeve. That's why instrument cables have a tip and a sleeve -- to accommodate those connections. Plugging a stereo cable into a monaural guitar will not make it stereo. You're only get signal to the tip -- the left side output. If you want to hear out of both sides of earphones, you'd first have to run your guitar to a mixing desk, then to your headphones.

Do these work with beats headphones? I have a pair of the newer ones

If your bose headphones have a standard 3.5mm plug, you can test. This 1/4 to 3.5mm adapter is used to connect smartphones, tablets or headphones with standard 3.5mm plugs to audio devices with a 6.35mm stereo jack.

I want to use my headphone on my Yamaha digital piano. my headphone is 3.5mm, and the piano is 6.35, will this work?

Would this work on a car radio the microphone input for your phone ? I have a micro phone 2.5 and I believe the radio is 3.5
