Q: What is the maximum height of makeup pans that can fit in the palette?

No higher than 7mm including the shadow itself. I put one in that had a curved shadow colour which stuck out above the pan and this has rubbed off on the lid because it touches it when the lid is closed.

Q: How many Sydney Grace pans can fit in each empty palette?

Hiya, I am not sure how many cm Sydney Grace's pans have. If it's a std pan (2,5-2,6 cm) you should be able to fit 24 eyeshadow singels but they won't fit perferctly in a row and there will be some empty space left in th pan.
