Depends on the set you choose, the "beginners set" has 5. The "Deluxe set" has 9 and the "wide set" has 4. I bought the deluxe and it has everything I need for the moment. Its worth buying the whole set.

What's the difference between premium flexcut and the standard flexcut plan knives? Any difference in metal quality or is it just a different handle?

I have both. I can’t tell any metal difference. Handles seem to be the only difference. The premium handles are a little bit smaller and made of cherry wood.
