Sweet potatoes - a breeze. Mushrooms - flawless. Apples, pears, oranges and lemons - perfect! I have used it for many other fruits and vegetables, too, all with ease and precision. The weaknesses - the julienne sizes are too small. Other reviewers stated the same so I was aware of this at purchase time but it is still worth noting. If you intend to make fries or wedges from your vegetables, be prepared to continue using your favorite knife unless you want ultra-slim fries. For me, I do not like the slim cuts because they do not cook up right - thicker is better. Another MAJOR weakness, and almost resulting in a loss of two or more stars, is that this Mandoline does not have legs to raise up the device to allow food to flow out easily and it can easily slide on you. These are significant issues but both can be overcome. I just have to remember to regularly stop, remove the foods from under the mandoline, and then continue. My previous Swissmar could be mounted over a large mixing bowl allowing for all the food to fall nicely in without my having to stop at all. It cleans up easily. The blades are not replaceable or able to be sharpened, as several reviewers have noted and complained, but at this price, I am okay with this weakness. After using it for several major cooking projects, I decide to give the Swissmar four stars. If it had legs or was raised up just a bit more AND it had a better julienne feature, this tool would definitely have five stars. Would I recommend it? YES. Would I give it as a gift? YES. Why? Because it does its job and it does cut. I can live with the weaknesses because overall this tool will save me a lot of time in the kitchen. Review: Excellent tool - This is a real time saver. It's also excellent for making uniform slices. My only complaint is that I would like to make larger "juliennes". They are a bit small for French fries. It took a little getting used to. If you are shredding cabbage, don't core the cabbage first. Cutting the cabbage in half was perfect. It leaves very little behind in the food holder. I recommend getting one of the cut resistant gloves to go with this. Some food isn't a very good shape for the food holder and those blades are sharp. I use a cut resistant glove, rather than the food holder for cabbage.

Almost Perfect, But Beware... It Bites!
Wow, I had no idea slicing could be this easy. This product is one of the best-designed slicers I've ever seen. It's incredibly effective, easy to clean, and stores safely and compactly. Word of advice: DO use the food holder if you can. The blades on this thing are unbelievably sharp. I thought other reviewers were exaggerating or clumsy, but the very first thing I did with this thing is cut myself and bleed all over the food I was preparing. It's damn sharp, and the bladed attachments make it even more dangerous to use. I do wish this thing could cut slightly thicker slices. It does an amazing job at the thin and medium stuff, but thick slices are out of the questions. Same goes for the "fry" attachment. The spacing is far too narrow, and I'm left with julienne-sized sticks of whatever I'm slicing. The "dicing" feature is questionable. First, you can only dice stuff REALLY REALLY small, like 1/8" in size. And second, you need to rotate the holder by 90 degrees on every stroke for the dicing to work. But the holder is only meant to go in one direction. When you're running it sideways, you risk hitting the sharp blades with it. It's an odd balancing act. So after I sliced my hand open repeatedly on this tool, I decided to follow advice and buy some cut-resistant gloves. The gloves I chose were the NoCry Cut Resistant Gloves available here on Amazon ( http://www.amazon.com/gp/product/B00IVM1TKO/ref=cfb_at_prodpg ). When I received the gloves the next day (thanks to Amazon Prime and cheap overnight shipping), I immediately donned them and attempted to slice some tomatoes. The gloves, they did nothing! Well, except turn red when I sliced right through them and into my thumb. Those are some damn sharp blades!!! Be extra careful when cleaning this tool! The blades end up being fully exposed, and sometimes the only way to get rid of the food stains is to scrub the blades with a cloth. As per the instructions, this tool isn't meant to go in the dishwasher. On the other hand, drying is a breeze. Just assemble everything back together and let it stand on its end either in the sink or on a drying pad. It'll drip dry in no time at all. Luckily, storing it is much safer than using it. In the "Safe" position, the default tray protects the blades completely. And with the attachment holder, the bladed trays aren't likely to bite when you least expect it. So why 4 stars instead of 5? I really wish I could cut thicker slices/sticks with this thing. It would just need one more notch of adjustment and a slightly wider spacing on the bladed attachment to be perfect. But since this is as good as mandoline slicers get, it's hard to complain.
