Its higher quality is reflected in the higher price per ounce. "Degrees nitrogen" is a measure of the protein content of the sauce. The higher the protein content, the more umami-forward the flavor of the sauce. Protein levels this high are extremely rare in fish sauce, making the 50°N Phamily Reserve Classic a very unique fish sauce.
