Are these see through?

Yes, if you look through the Head opening and out the big hole at the bottom you can see through it.

Is the seam at the shoulder flat, or is the material bunched up and stitched there like most tanks?

I would say flat and I have to say I have never worn better. Having found these couple years back, and after throwing out everything else, I just can't remember wearing anything else.
