Can you fold it to pack in a large suitcase?

I would be afraid it would cause the noodle to crack and split, if you tried to fold it. If it's a large suitcase, I'd say you could gently bend it around the outside corners of the suitcase and then add clothes inside of it and on top of it. That would probably work just fine.

Will this hold an adult above water level well?

Yes. I use it to sit on and the water level hits me about the top of my shoulders, just right for floating around the pool. I weigh about 180.
