Great knife
Great look. Incredibly sharp out of the box. I was a little concerned that the handle would be too small compared to the Bob Kramer knives i have. However, I find that it is very comfortable to use. A little larger than a standard paring knife, it is great for creating a very small dice with small items such as garlic, jalapeรฑos, shallots, etc. Highly recommended.

Shear Perfection!!!
I just turned 60 and I've been cooking passionately since I was about 25. I've been trying to learn little by little as much as I can about every aspect and preperation of gourmet cooking. I have taught myself with lots of practice on using Japanese water stones (wet stones) on my less expensive knives before I purchased These works of art. This is my 3rd Miyabi knife with 1 more on the way, then I'm done. All I have to say is Oh My Gaaaaaad.... these knives are absolutely the Best I've Ever used! They are lightweight and comfortable to hold. They are deadly sharp and slice through anything like butter. I wish I could buy more but I've already spent my quota for the year. Maybe Miyabi would send me the Birchwood pairing knife to complete my collection of perfection. I Highly recommend Miyabi knives. I've done my research and these are by far the Best knives ever. With all that said.... This knife is Way smaller than it looks in the picture. It's great for slicing mushrooms and tomatoes.

Quality
Just received this pairing knife. I was quite surprised in how light it was in my hand as well as how well it felt in my hand. The craftsmanship is outstanding. The blade is gorgeous and more importantly, SHARP. Iโm looking forward to using it quite often

Elegant
I canโt think of any thing bad to say. This knife is beautiful, itโs extremely sharp and a wonderful addition to any kitchen. Just be careful cutting and never put this in a dishwasher or allow so it wet for too long. That goes for all kitchen knives that arenโt ceramic tho.

Disappointed
The knife looks like new. But its cartoon box is opened many times, itโs scratched and teared. Probably was demo piece. I bought it as a gift for my cousin, but will keep it.

Incredible knife!
The Miyabi SG2 Birchwood is not only an excellent knife, but a piece of art as well. This is my second Birchwood, they hold an unbelievable edge and are a pleasure to use. If you're serious about having one of the best tools for the kitchen, this is it.

great knives
Very nice knife of high quality and extremely sharp its also a very nice looking knife and it feels great in the hand. The wood handle looks great as well as the damascus pattern used. I own Yaxell, Yoshihiro, J.A. Henckels, and Shun knives I would place this second as far as quality behind yaxell but a close second the blade doesn't seem to take quiet as keen of an edge and dulls faster but both of these are so slight most wont notice but it is there, these are a little cheaper than my yaxells so i would say quality to price is about even between the 2 brands these are great knives and I would recommend them to anyone.
