I just got it and the wood doesn't smell like anything at all. will that change when I heat it in the smoker?

It will smoke a lot once it's heated. But it burns out very quickly so prepare to replenish. I also had to soak them prior to using to get maximum smoke from them and to keep them from falling out of the smoker tube. Larger chips are better than this product in my personal opinion.

what is the expiration? how long can this be kept, unopened?

There is no expiration, it is sawdust. You can keep forever.

Hickory? or hickory flavored? please check your copy for this item. hickory "flavored" suggests that chemicals have been added to taste like hickory

Package only says "wood chips" never heard of chemicals for hickory flavor when burnt. If it is something they have to disclose it does not, if not you should contact Camerons.
