Q: How often will you need to hone a carbon blade, and will you need to find a carbon honing steel or is a stainless one okay?

Hone vs sharpen. I took out my waterstones and put a nice sharp edge on it after I got it. Now I only hone with one of my two steels frequently - a couple of times a week, I'd say. Nothing serious. 4-6 careful swipes. Not much pressure at all. It doesn't need much as it's sharpened already. I've never heard of a carbon hone. The ones I have are stamped "Hartverchrompt" - hard chromium steel. With that much chromium, they're definitely stainless. I have a ceramic one as well. Both work.

Q: Does anyone know how the blade is cut? left or right handed? or 50/50? thank you!

it cuts the same for right handed or lefty no difference.
