Is the tray sturdy/stiff or flimsy/soft?

It is pretty sturdy. The only issue I have is the way my daughters carseat is the tray tilts forward, but it is very nice and helpful. I wasn't disappointed by the purchase and I looked at a lot of them before choosing one.

Can kids color directly on the travel tray?

Yes,the tray is designed with a reusable surface to be colored on,I perferred to put a blank paper under the transparent tray's surface, it can see more clearly when my son colored his imagination.

can an ipad pro fit in the tablet slot?

If it doesn't fit in the plastic slot you can use the Velcro pieces to make a place for it. That's what I did with the tablet because it has a case that makes it not fit in the plastic slot.
