Italian Sausage Success
This is a great blend for Italian Sausage. It makes a mild sausage with a little kick. It does 50 lbs of sausage and I make it in 10 lb batches. I measured the level of the blend(5") and with a permanent marker made lines every inch on the container for my 10 lbs of meat. I ground up my shoulders, mixed in the spices, then reground a second time. Some of the best sausage I have ever had. Tastes like NY style sausage with the fennel in it. I would recommend to anyone who is looking to save money on sausage. I estimated I have about 1.75 a pound into it where store bought is over 3.50 a pound. It is also very healthy. I will be purchasing other blends in the future to also try.

Nice mix, heavy on salt
I used this mix today to make venison/pork sausage. followed recipe and sausage came out too salty, I had to dilute with more ground meat and beer to reduce the salty flavor. Looking at the mix, it has a lot of salt. after the mods to the recipe , the Italian sauage did come out very good. certainly plenty of product compared to competitors.

Wiener seasoning
Great seasoning mix. Used these to make hotdogs from antelope and elk. Both turned out great. I did add some hickory smoke powder to the mix also and that made it even better

Way to much salt
I made my first batch and was disappointed in how salty the tasted. Others who tried them mentioned the same thing. I did mix the seasoning up very well before using it. The taste was right on for Italian Sausage with a kick of salt! :)

I then smoked the hot dogs with charcoal briquettes (I like the taste better than wood chips) for 90 mins
Used about 1oz spice per pound, followed the directions on the back. I then smoked the hot dogs with charcoal briquettes (I like the taste better than wood chips) for 90 mins. I then Sous Vide them for an addition 90 minutes at 170 degrees Fahrenheit. They were then fully cooked, but we grilled them and they were the best hot dogs I have ever eaten. The person I was with said they were better than Nathan's hot dogs -- I agreed. ;} Even better plan without condiments or a bun. Nice to not worry about having to hunt down the spice and get just the right mix. This premade/premixed option is worth it!!

Added this with 55lb of ground pork and every bite has flavor and tastes like Italian sausage that I was expecting.

Save your money, don't buy
WAY TO SALTY. simply awful. We added a bunch more meat and our own spices and salvaged it. I may use in lieu of salt in the future with other spices but will not use much. I'll never buy this brand again
