Q: Does this fit mario kart hot wheels cars? the characters sit higher than regular hot wheels.

I have never seen mario kart hot wheels. The sections in the organizer are 1.5 in deep, 1.5 in wide and 3.75 in long. I know some of my great grandson's hot wheels and matchbox just make it depth wise. When I buy more for him I try to eyeball them in the store with the package and the organizer. We haven't had to leave any out yet. I hope that helps.

Q: How many little dividers are included?

4 small dividers for shorter cars just on 4 sections. All others are fixed. All my cars fit well.

Q: Can the middle slots be removed as well? I have a larger scale car that id love to fit big not entirely sure if they are removable…

There is only movable slots for one single row on each side (This is a double sided container). All other rows and columns are fixed in place. Can only hold cars the standard width of a hot wheels or matchbox car, but the one row with removable slots can accommodate longer vehicles like semi trucks and trailers.

Q: What kind of plastic is it?

It is perfect for small cars, small baby dolls too. Hard plastic as shown. Great snap closure.
