Shan zu.Supplied ones are far too heavy and uncomfortable in the hand. These are perfect.Five stars would have been awarded if they had been in the set I purchased.

The Genbu series filleting knife by Shan Zu is manufactured to a high standard, the knife comes in a storage box and sits within a foam insert inside.My first impression was of the quality and the beautiful handle detail, the blade is 7" (12.4" total length) and overall has a lovely balance to it, the blade is ultra sharp and ground to a 15° cutting angle per side, the blade itself is made from Japanese stainless steel and nitrogen cooled for enhanced hardness, I like the polished blade finish and the etched branding along it.The handle is made from K133 Pakkawood that is highly impervious to heat, cold and moisture, it is polished to a high standard and has a beautiful grain, it thickens out as it reaches the blade to allow you to know where the edge begins.Overall, exceptionally made to a high standard considering the price also, lovely to hold and use, has a sharp edge that is perfectly ground and polished leaving no burrs, cuts well and perfectly balanced, would have loved to have had a leather sheath included but this can be used as part of a set and placed inside a knife block, I hope that you have found my review to be helpful, thank you.
