Q: Are these suitable to use with waterproof (IP65) strip lights?

If you want to connect WATERPROOF LED strip light, you should peel off covered silicon on the surface around soldering line area. You can also choose another connector (ASIN:B092726YTT)

Q: Do i need to use a led driver transformer? have power supply under kitchen cabinets as there’s fluorescent tubes in currently.

For the connector (the item you asked this question on), it doesn't matter :-) I just used an old 12V DC power supply I had lying around. As long as the power supply can supply the power at the desired voltage and current, you should be OK. Beware that on many power supplies you will see a drop in voltage as it is loaded up - which affects brightness (and overloading a power supply is never a good thing). It is worth measuring both voltage and current with the LEDs connected... Also: Running the LEDs at their brightest will most likely reduce their lifetime due to the (small) amount of heat generated. I ended up fitting a variable resistor in series with the LEDS which allows me to dim them to "just right" - rather than being stuck on "retina killer mode".
