Last week, I was surfing for butcher paper for the freezer, when I happened upon this pink paper. Curiosity found me reading the reviews, and I was blown away at the hundreds upon hundreds of 5 star reviews. So, I ordered a roll.This evening, when I arrived home from work, my husband announced that he had cooked an 8.62 pound ham. I cringed, but thought I might cut it up for scalloped potatoes, since it was going to be dry, as usual.To my surprise, he had used the new pink paper! He brought it into the house, set it in the sink, and we sliced a bit of ham off. This was the most flavorful, tender, juicy ham he has ever cooked, and he's cooked many a ham. I can only imagine what it will do for brisket.I'm very pleased, and will definitely keep this in our kitchen stock. Thank goodness for the handy roll keeper, too!

Great Butcher Paper
UPDATE: Okay, defrosted a piece of fish wrapped in this butcher paper and it was as fresh as the day I wrapped it. Works GREAT!Okay, I ordered this a while ago and was waiting to use all my tin foil before I tried the butcher paper. I wrapped fish in tight plastic and then in the butcher paper. This paper is great. It is heavy but easily cut by sliding open scissors along the paper. Was able to get a tight wrap. In about a week I will remove a piece of frozen fish and check it for freezer burn. But honestly that outcome would not affect the quality of the paper, which is great. Shipped in a tube for easy storage. Loved that since I was wondering how I would store it.

Top Notch Pink Butcher Paper at a fail price.
I've smoked meat for several years and was recently exposed to the benefits of using pink butcher paper during the smoking process rather than foil. I decided to give it a try while smoking a brisket and was very pleased with the results. This paper performed excellent. The tube in which the paper is shipped and stored is an added plus. Thanks to Mighty Dreams for offering such a great quality, heavy weight pink butcher paper and for the quick shipping. Will return in the future to purchase more.

I like the cardboard storage tube it came in
The butcher paper arrived on time, well packaged. I like the cardboard storage tube it came in. Great idea! The BBQ tips e-booklet didn't provide me with any new information, but I can see how it would be useful to someone just getting into the scene. A bit more detail about ideas to actually use the butcher paper for cooking projects might be useful to folks. The paper itself is a little thinner than I expected (but, in fairness, I am not an expert on butcher paper in general), but seems of good quality. I am happy with my purchase.

Best Brisket Yet!!!
If I could I'd leave ten stars I would have. I had been using Turkey browning bags when I wrapped briskets on the last part of cooking. The Browning bags accumulated to much of the juices and made the Bark to soggy if not entirely washed it off. I tried this Pink/Peach butcher Paper on my last smoked Brisket. It turned out to be the best one yet not only did the bark stay firm the meat wasn't all greasy from sitting in the juices from the turkey browning bags. It didn't take long to convince me this is the way to go. I am more then happy with the results using this P/P Butcher Paper. I adviced my family and friends how good a job it does. I will be ordering the 24 in wide roll next time.

GREAT PAPER FOR SMOKING BRISKET!
After recently purchasing "Project Smoke" cookbook by Steven Raichlen on Amazon I attempted my first ever brisket. He stated butcher paper was needed to achieve the perfect brisket and I'm glad I listened. This arrived almost overnight, was well priced and high quality...perfect for what I was using it for. The butcher paper absorbed much of the fat while brisket was in its 2 hr. resting state, while allowing air to escape, thus avoiding the "pot roast" effect that aluminum foil imparts. The bark was presentation quality! I'll continue to use this particular brand of paper and this seller as well. Thanks!

Good Paper and a Good Substitute for Tinfoil
Ribs are one of my favorite things to cook and for years I wrapped them in tinfoil as one of the final steps. The result was ultra tender ribs minus the delicious bark (crust) which I worked so hard to achieve. Now for the first time I can have the tender ribs while maintaining the delectable bark.This butcher paper worked great. I wanted a tube to keep it in for storage and it came with that and the paper was a great substitute for tinfoil.

It works
I've been smoking brisket a couple of times a year for about 30 years. My rule of thumb is that if a method works 3 times in a row it is probably the right thing to do. I have never used butcher paper before but decided to give Mighty Dreams pink paper a try. My first go was a success. I smoked a 10 pound brisket. 6 hours with indirect heat on a smoker. Wrapped and 4 more hours at 250 in the oven. Juicy with a good bark. I'll let you know if I have three times success. So far, so good.
