Colorful Change
Used to make Midnight Ritual drink PF Chang’s had last year. Used to change gin to blue color. Add lemon juice and changes to bright purple.

Great addition to my cocktails!
I've had so much fun playing with this in my cocktails! I love the effect it gives when I stir this in. Note: it is very sugary, and so in drinks it layers nicely at the bottom if you're doing layered drinks. The blue color isn't super dark, so when you mix it into a cocktail it stays a light blue until an acid is added, it doesn't turn navy or very dark. Note that if you use mixers that have their own dye the effect won't show up, so blue Curacao can't be used with this in my experience. Also, if you want to revert from the pink color to the blue, you can add a pinch of baking soda in water and go back. I was able to make the dye go between blue and pink several time. There is no distinct taste difference to cocktails that use this syrup.

I just love the color and the color changing effect, and the taste and antioxidants. I enjoy it most mixed in water and frozen to place in drinks :)

Works but kind of weak.
Great color and works good for a garnish on top of foam in say a gin fizz or sour. To weak to make a drink change colors, have to use too much off the bottle. Better off making a tea if you need something stronger.

pH color change cocktails with little effort
A fun way to get the color changing capabilities of butterfly pea flowers without needing to steep.Add a few drops to water and make into I've for a slower, diffusive, color effect.If the blue isn't vibrant enough add tiny amounts of baking soda until you get the perfect tint. Then add anything acidic for the color change.

The supposed blue coloring ability not evident in drinks.
I was unable to get achieve a noticeable /desirable coloring effect with just the typical dropper application; therefore, its not very economical for my use. Same opinion as far as the flavor is concerned.
