How deep is the well?

Edge is 1inch deep and raised center is half inch deep.

Carbon steel or aluminum? It is listed as steel but says aluminum in other areas. Thanks to anyone.

Will this pan hold 2 qts?

I don't think so . I used a single cake mix for two pans and there was some mix left over . You will need a bigger size .
