How much weight does this support?

I just use 1 photo back drop at a time. It doesn’t bow in the middle. I’ve also used the backdrop with a themed shower curtain. Still no bowing.

Should I get a 10 x 8 backdrop with top and bottom pole pockets, or grommet holes to fit this backdrop?

THE BEST OPTION IS THE TOP AND BOTTOM POLE POCKETS IF YOUR TRYING TO DISPLAY A BACKDROP OF A PHOTO AND IF YOU ARE TRYING TO PUT UP A BANNER YOU SHOULD GET GROMMETS HOLES WHERE YOU CAN PLACE SMALL ZIP TIES OR HOOKS THROUGH THE GROMMETS TO THE POLE BUT BE CAUTIOUS OF THE WEIGHT.

Can it support balloons ?

I'm pretty sure that it can. It held a banner that's made of tarp material. I'm sure balloons are much lighter.
