Q: Can this camera really accept ef-s lenses? i didn't think full frame cameras could use them.

No, you are quite right, ef-s lenses do not work on the 5Dlll as it has a full frame sensor.

The 5D3 is very good for noise, and video is acceptable, if you want a DSLR that does video then the 5D3 is a very good option. Nikon does have some odd colour settings but you can change them, the answer is never black or white, each camera has it's strengths and it's weaknesses. I use both the 5D3 and the D800 and enjoy them both. On the subject of noise, you can't get a better test that taking pictures of the milkyway, and the 5D3 has given me some very good images.

No unfortunately not the mk iv does though

Q: How is it that this costs less than a £1000?

The camera costs more than £2000 new, and even a second hand one should cost more than a thousand, unless it is not in top class condition. The really important piece of information is the sensor, is it free of marks. I would be very cautious buying a camera of this quality for this price.
