Q: Is this 2 pounds or 5 pounds? Title says one thing and the description says another.

It's 2lbs., they arrived in a bag of sandy mud, sadly many were mushy

Q: Are these edible or only plantable?

This is NOT what I consider to be "okinawan" or "Molokai" sweet potato but, 'I' do believe "all" potatoes" 2 B plantable by simply placing an end part of a potatao in shallow cup or bowl of water and allowing them time to sprout root then transplant them in "good" soil and water sparingly. You can contact the Molokai potato company and asking them for help; the Molokai Potato Farm can be found online -- ;)
