Calphalon Unison Nonstick, Everyday Pan, 12-inch

Used all the time for two years now and have two of these and a third in storage. Gave two as Christmas presents because so impressed. Almost as good a BBQ grill and same or better than cast iron pans, except so easy to clean compared to cast iron. Does not require high heat which is how I ruined two slide unison pans; the handles do get hot. Have all but one unison pan and all are great. Use lowest heat to hear sizzle and wash well with soap. Writing this review after just reading the 3,2 and 1 star reviews. IMO most are not for the 12 inch calphalon unison sear everyday pan. Albeit thinner than other unison pan it is much thicker than most and does not warp if cool before washing (when cool soak in soap and water for ten minutes for even easier cleaning). Several reviews said warped on their glass cooktop, which would be hard to do since not magnetic, which is required to heat up. Again, must not be for the 12" calphalon unison everyday Sear pan. Unison has been discontinued and hard to find; most prices are outrages. Current Amazon price at this writing is $59, as much as $100 below all others on the web. Treat this pan and all Unison with care and IMO will last a lifetime. Hard to believe the non-stick coating would come off. Took my ruined pans and scrubbed with a green scrubber trying to remove the carbon coating created by high heat and not cleaning well. After removal of some of the carbon the non-stick coating was in place; could not remove enough and non-stick quality was not good so trashed.

Fast, simple, one pan cooking at its best is possible with this Calphalon Unison Nonstick 12-inch Everyday Pan. The nonstick interior is lightly textured to help properly sear meats, meaning you can think beyond skillet dinners-in-a-box or casseroles. To take the pan on a "test run", I preheated over medium-low heat on my gas stove top burner, lightly coated the interior with cooking oil spray and browned both sides of three chicken leg quarters within about 7 minutes, I then added a cup of water and chopped, fresh vegetables around the chicken legs, sprinkled on some seasonings, covered, reduced the heat to low and simmered everything for just under 20 minutes. The result? A delicious, healthy, quick and easy meal for my family at less than $3.00 total for all ingredients. I'll try to upload a picture.Important information for anyone buying any kind of nonstick cookware, including Calphalon Unison (which is the very best by my experience), is to never have your stove top burner set higher than medium, always use wooden, plastic or nylon utinsels, and lightly oil the interior occasionally after washing. Although Unison cookware is supposed to be oven safe to 500 degrees, I wouldn't (personally) place it in an oven hotter than 400 degrees... I generally set my oven temperature at no higher than 375 for anything that isn't dedicated bakeware. With simple care, this Everyday Pan should last for years. I love that it's large enough to make a meal in one pan so cleanup isn't a chore after a meal.Having tried many, many brands of regular and nonstick cookware over the years, Calphalon Unison pieces have proven to be the most durable and reliable with daily, heavy use. Yes, it's expensive, but so is replacing a less expensive, lower quality, much-used pan every two to five years. If you're able to pick up this brand at a reduced price you'll save even more money over time.

This is an excellent all-purpose pan. It is heavy-duty, very well made, and simply put, solid. It is a heavy pan, which I love, and it's non-stick surface is wonderfully non-stick -- no need to drown the surface in olive oil or butter -- a little truly goes a long way with this pan. The depth is "just right" allowing one to cook and braise decent sized portions of meat, and at the same time versatile enough to cook pancakes and omelets, etc. Clean up is a breeze. If you make sure to use non-metal utensils it'll be a pan you will no doubt use for years to come. I couldn't be more pleased with it.The searing ability is so good that I have all but given up on my outdoor propane grill - this pan does a nicer job searing filet mignons and gives a lot better temperature control.I recommend the larger 12-inch size. The smaller 10-inch is a little oddly proportioned. Bottom-line: If you're looking for a wonderfully versatile, non-stick, heavy-duty pan, you will be hands-down, thrilled with this one. Best Pan I ever purchased! Best deal for the price offered! Extremely high quality product which I use each and every day several times a day. Better than a cast iron pan which needs upkeep. It holds a lot of food, cleans up like a dream and cooks quickly and evenly. I use it to make eggs, saute vegetables, prepare sauces reductions, sear meats, Frittatas, you name it and it comes out wonderfully. Purchased two and will probably be purchasing more as back-ups but most of the time i use one pan, then just wipe it out with a paper towel and use the same pan to continue cooking - no worry of residue flavors from the previous cook. Can't say enough about this pan.

Great pans, you must be sure to use medium heat and to let it cool before soaking. I am very happy with it, my only reason for one star is that it is still not safe for birds in the kitchen because it has the coating inside. I a bird near kitchen and cover her when cooking. The pan and the company is awesome and I love everything else about it and I recommend this company highly. It is also one of the FEW that are made in USA and not only do I like that but it also makes for safer products to eat from as our standards are MUCH higher then some other places.

Wonderful pan useful for many situations including searing meats and cooking casseroles, pancakes, eggs, etc. Love how light it is yet the handles are sturdy. Handy to have a lid and wide enough to hold a substantial amount of food. This pan is designed for searing flavour in at a high temperature and it does that well yet cleans up easily so I just quickly hand wash it In order to use again for the next meal.

Perfect arrived in good time.

I bought this pan only a couple weeks ago. I have exclusively used silicon spatulas on it and only cooked eggs and the occasional chicken breast. While essentially babying this thing it seems to have started to peel off in the middle. I'm the only person using this and hand-washed it with a soft sponge after every use. This is very disappointing given how new it is. I don't know if the hole will spread, but I definitely don't want pieces of this stuff in my food.
