The grits come from a whole cob of corn which is dried and ground. The drying process causes some kernels to be black, brown white or yellow according to your choice of grits. The flecks are harmless.

Are these hominy grits or just plain corn meal?

These are "plain" (great) grits. Hominy grits are a type of grits made from whole or ground hulled corn from which the bran and germ have been removed by bleaching the whole kernels in a lye bath as a form of preservation. Hominy grits have a distinctive flavor, sort of "grits plus". However, Palmetto Farm grits are definitely the "real deal". We love them and have them at least once a week. Usually prepare them the evening before a great breakfast the next morning.
