Will these work for long dresses?

These are really not tall enough for large size dresses or clothing. They are great for mid size, such as jackets etc. You could possibly use this size for large clothing, but you would have to tuck the bottom portion in.

how meany shirts will fit in a box

It would depend on what type of hanger you use. WIth wire hangers, 30-40 shirts would easily fit. WIth wooden hangers, it would be significantly less.
