Is it airtight and safe for oat milk?

The yellow lid has a vent hole; the white lid is one of those type of lids that has the plastic seal on it when you put it on. Regardless, we use the bottles for raw milk straight from the cow. We've had no issues---even with it sitting in the frig for a week

Am I supposed to remove the security seal?

It’s not really a security seal. You can use the glass container 2 ways. Using the white top or the pour top. When the pour top is on, remove the red safety piece before trying to take it off otherwise it is like a vacuum and difficult to remove.
