Do I put the whole length in? I've never used an oil lamp

No, I cut it into 10 to 12" pieces , one for each lamp

I have a lamp with a wick that measures a little wider than 1/2 inch. it's a dietz little wizard. will this wick work?

It should. The opening for my wick is right at a 1/2 inch and it's pretty snug. If yours is another 1/8 inch wider or so, it should fit great.

will this work for an olive oil lamp?

Yes it will. It will wick olive oil just fine.
