Does this griddle work well for making lefse?

Lefse are similar to crepes it is a Norwegian traditional potato flatbread similar to a thick crepe I have not done it the only items you add is the potatoes. I believe you would not have any problem by making them. I used mine and it was great. I also made the Spanish Galician crepes and they were great.

Does this include the cook book. i see in some reviews it did not come with it
