Many years ago I had the pleasure to meet Laura Fagiolo, on her wonderful farm in Italy, through friends of ours from Rome. Her farm is located in the rolling hills of Lazio surrounded by citrus trees and olive groves. We spent the day there, and at the end of the day, Laura not only prepared an amazing meal with meats and produce that she had raised, but she introduced us to her Cru di Cures Extra Virgin Olive Oil. This is honestly one of the very best olive oils I have ever tasted. It is smooth, yet bursting with the flavor of fine, ripe, fruity olives. There is a subtlety to the flavor, and it doesn't have the ultra spicy taste that so many olive oils do. Don't get me wrong, bold, spicy olive oils have their place in the culinary world, but Cru di Cures is at an elite level that the ordinary olive oil is not. Every kitchen should have a variety of olive oils to cook with, and this should be one of them. I use Laura's olive oil to compliment fine bread, fresh salad dressings, elegant risottos, delicate pastas, to cook fish or poultry or sauté vegetables. This is not an olive oil to be used with heavily spiced dishes or dishes that have intense flavor. The glory of this olive oil would be lost in dishes like that. This olive oil is like a fine wine and should be savored for its fruity bouquet, subtlety elegant flavor and overall amazing offering of the best the olive has to offer. So, I heartily recommend this olive oil to you if you are looking for something out of the ordinary.

I’ve always just purchased the EVOO from my local grocery store and didn’t think much about it. Then I was introduced to this olive oil. It is delicate and smooth and full of flavor. I use this as my salad dressing or to dip bread into. It’s expensive but well worth the money. Everyone who I’ve had try it, loves it as well.
