Top quality knife for the home cook
This knife is the sharpest we have ever had and cuts beautifully. It feels good in the hand due to the design of the handle and the overall weight. It also looks impressive; the ebony handle is quite distinctive. My wife is delighted. The blade is very thin and has been hammered to allow the knife to slide easily through the meat, veggies etc. The steel is high carbon VG10 steel manufactured in Japan, the best stainless steel for home cookery. When the knife needs sharpening it should be ground to a 15 degree angle not the 20 or more typical for European knives. As this is Damascus steel. use a fine grit of 1000 or finer. A minoSharp knife sharpener will do the job. Don't try to sharpen it with any other knife sharpener or a steel as these will ruin the edge. You could use a whetstone but this requires a lot of skill. But the knife is made of the finest materials so it will not need sharpening often. Reasonably priced for what it is -- a top-of-the-range quality knife for the home cook.

Made in China, beautiful true Damascus steel, decent hardness.

This review is actually for the 10 inch.Initially I was disappointed to find that this knife is actually made in China, as it was hinted in the description that they make knives in Germany and Japan.This does make me question the materials used as there is no authenticity certificate in the box which I’ve seen in the past with knives in this price bracket.That said the description does say it is Japanese VG10 Damascus (folded) steel and honestly even if it is the Chinese steel type 10Cr15CoMoV they are not dissimilar in hardness.This knife has a hardness of 58-60 and should have good wear resistance and rust resistance and still be pretty tough.This is the other tell tale sign that this hasn’t been forged in Japan where they won’t go below 60 or above 61.The handle is ebony and quite beautiful it feels smooth and is still easy to grip and has a nice ergonomic shape.As far as I can see this is Damascus steel, and although the amount of folds don’t matter other than to make a very pretty pattern I believe it is folded and forged and not etched, and looks gorgeous.It has an uneven hammered pattern, a nice weight and feels balanced in the hand.It is very sharp and makes easy work of slicing fish and seafood.It comes with a cleaning cloth, a leather sheath, which serves it purpose but I’m not a fan of the rustic design.Overall I would say this is a truly beautiful knife. I’m no expert but I would say it’s good value for money, true Damascus steel and a decent hardness. It would make a lovely gift and is presented in a lovely box.I hope you find my review helpful.

Beautiful fake Japanese style blade made in China
This has beautiful Chinese made knife has a symmetrical blade, so works well for either for left or right handeduse.It is made to appear like a Japanese knife from Chinese carbon steel with a gorgeous pattern that shows the layering, but I suspect the pattern is done with laser etching. Since the secret to creating genuine Damascus steel was lost at the end of the 19th Century, the description and engraving making this claim are inaccurate. The manufacturer's attempt to associate these blades with samurai swords is also deceptive. I actual practice a traditional Japanese sword style, so I have a very good idea how real samurai sword blades look and feel. This bares few of the hallmarks. Without the deception, I would have given it another star.the blade reduce the amount of food that sticks to the blade as you cut. The blade slides through hard vegetables like carrots so smoothly you hardly notice. In Japan, chefs normally rest one hand on the back of the blade to improve the force and precision of the cut. This works for this knife, too.Presentation is also fantastic if you want to give one as a present. It comes in a lovely black box, with the manufacturer's trademark.The handle is smooth and hard to the touch, but provides a good grip. The knife balances just before the blade starts, rather than a point within the blade.Is it a good knife? Yes.Does this knife relate to Japanese blades, other than looks? No.

Japanese Hammered Damascus Knife
The YOUSUNLONG 8 inch Slicing Knife arrived in a stylish black box with subtle branding on, the lid lifts off smoothly to reveal the beautifully crafted blade, it is located in a clear bag and sheath with a plastic point protector on, there was no sign of a leather sheath for me as advertised but I am thinking this may have been a one off due to other customer images showing it.As I removed the knife to check it over I firstly noticed the Damascus hammered blade, it is eye catching and beautifully made, the steel layers and hammered top edge add so much quality and character, the handle is made from natural ebony and the bolster and tang finish it off nicely with red banding details on.The knife feels comfortable to hold and it is well balanced, I actually look forward to prepping the food using this knife due to the comfort and the blade sharpness along with its cutting angle.Overall, stunning blade using a 67 layer Damascus technique, there are 33 layers either side of a stainless steel VG-10 core that is sharpened beautifully, the handle is very dark so you cant see much of a grain or character to the wood, there is a slight lip between the bolster and the tang that drops the quality of it a little for me, also the edge doesn’t quite meet perfectly here either, very sharp and cuts effortlessly whilst being comfortable to use for long periods at a time, did not receive the leather sheath but I think this was a one off, I would happily purchase other variants and proudly display on my magnetic knife stand in the kitchen, thank you.

The media could not be loaded. This is nice looking sharp knife. Comes in beautiful box with knife blade cover.I like the mirror polish and high quality solid steel blad material and it's sharpness.It's lightweight and I feel comfortable holding it.Would recommend 👍

Yousunlong 10 inch Damascus Meat Carving Knife
The knife has quality materials and a handle with a great feel and it is very sharp. Makes work in the kitchen a breeze with all forms of beef, chicken, fish, turkey, pork, etc. Really interesting looking as well.

Très déçu.
Chef de cuisine, je me faisais une joie de recevoir ce couteau que je trouvais plutôt jolie et qui semblait prometteur sur le papier.Et bien, j'ai été très déçu au point de renvoyer ce couteau.Certe très beau, il ne coupe pas.Très mal aiguisé, pour un produit qui dépasse les 100€, on peut s'attendre à un trancheur digne de ce nom, une bonne lame de rasoir. Et bien non, c'est nal affûté et pour ce prix là, j'estime que ce n'est qd même pas à moi à finir le boulot!!!Le manche est trop gros et pourtant j'ai de grandes mains, il n'est absolument pas agréable à tenir.Pour ce prix, je ne m'attendais franchement pas à si moyen, en tout cas, moi, il ne m'a pas plus.

Ein weiteres Messer "Made in China"
Ich habe bereits viele Messer in allen Qualitäten im Vine-Programm getestet. Für Messer dieser Kategorie habe ich einen allgemeinen Überbegriff: "Made in China". Es wir billig (und damit meine ich nicht kostengünstig sondern wirklich das negative billig) in irgendeiner Fabrik in China produziert. Es es sich wirklich um Damaststahl handelt lässt sich nicht überprüfen. Die Optik und das Design lässt eher auf eine nachträgliche Lasergravur schließen.Der Griff ist sehr mächtig und liegt nicht gut in der Hand. Außerdem spürt man über kleine, scharfe Ecken und Kanten. Es fühlt sich sehr unsauber verarbeitet an.Die Lederscheide zum aufbewahren ist ebenfalls von minderer Qualität. Man muss Angst haben, dass die Scheide nach mehrmaligem Gebrauch auseinander fällt.Für einen Preis von weit mehr als 100€ habe ich eine bessere Verarbeitung erwartet. Dieses Messer wird, wie so viele Andere auch, irgendwo in meiner Versenkung landen.
