Does this teff flour contain micro organism for fermentation?

I don't believe so, no more so than wheat flour.

I read that Teff has vitamin c. Why isnt it listed on the nutrition facts?

plants store energy reserves in their seeds, not vitamins which would be useless to the growth of their seedlings. So if the seeds contain vit c it is only traces. That is my guess anyway.
