Victorinox Fibrox 8-Inch Fillet Knife with Straight Edge and Black Flexible Handle

It's a fillet knife by Victorinox, not much else to say as they make great knives at a great value. The knife was super sharp right out of the packaging and I was able to make great fillets from walleye and rainbow trout. The rubberized handle provides a great grip despite plenty of fish slime. Would be nice if it came with a sheath, but everyone's preferences on those can vary so I can see why it's excluded.

The handle is very comfortable and is excellent at maintaining a sure and strong grip even with hands covered in slime or oil. Perfect for filleting fish, as your hands *will* get slippery. Very sharp and excellent construction.

I thought this knife was a bit pricey, but after using it I changed my mind. This knife fillets superbly, the blade flexes and glides through fillets like butter. If this knife holds its edge and sharpens easily I would recommend it.

Arrived sharp and ready to go. I used it to fillet two medium-sized black cod / sablefish. It was sharp and maintained a good grip. The 8" knife is actually fairly big, but it is light and still agile enough for me to do a decent job on this size of fish. Cuts through the small rib bones and skin effortlessly. The blade has decent flex to it. I'm not sure how long it will last before I need to sharpen it, but I'd say that for the price it already seems like it is worth it. I'm more of a cook than a fisherman, so not having a protective sheathe was fine.

I can only get frozen whole Popano where I live and filleting them with my old knife was a chore. The difference between using that knife and this one is night and day. Super-sharp so be careful but also long and flexible making filleting a breeze. The first time I used it I thought, "Where have you been all my life?!" There may be better ones around the pier, but for home use this knife's ideal. Only time will tell if it holds its edge. If not, I'll update this review.

Bought this knife for primarily filleting fish. Thing came out of the box RAZOR sharp. Nice feel in the hand, good flex, and nice handle. Sharpens easy. Such an awesome knife for the money.

Great product and i buy nothing but Victorian Knox knives. Very easy to keep razor sharp with a few strokes on the Victorian Knox Steel! Recommend both steel as well knife!

Tolles Messer, scharf und nicht so schwer

I own a fish market and I've tried countless knives for my staff. These are great. They can be sharpened easily and go back to the cutting tables. As they are inexpensive, I don't have to be too careful with them and can sharpen them on a bandsaw until they become too small to use. They last for a few years with my heavy use. Probably a lifetime if well taken care of at home.
