Rich, complex flavors. Excellent soy sauce.
This soy sauce is absolutely delicious. The sauce is relatively thick, and it has a rich complex taste. It was a little pricey but I did not care - this soy sauce is truly satisfying. Highly recommended.

A Smoky Elevation: Review of Soy Sauce Smoked Neoteric
The media could not be loaded. Review for Soy Sauce Smoked NeotericPurchased from YAMASAN KYOTO UJI, this slow-smoked, 500-day aged soy sauce is a standout in my kitchen. Its package is a stylish 12.17 Fl Oz bottle, but what's inside is even better:Taste & Quality: It boasts a rich, smoky twist due to natural brewing and no artificial ingredients.Authenticity: Made in Japan, it represents the art of traditional soy sauce brewing, using pure Ibo River water from Tatsuno.Versatility: This isn't just a condiment. It's perfect for stir-fries, marinades, grilling, roasting, and even salads.Philosophy: The brewery's dedication to natural fermentation and age-old methods is commendable, though it comes with a premium price and limited availability. Conclusion: The Soy Sauce Smoked Neoteric is a premium, authentic choice for those looking to enhance their dishes. Its price reflects its unique quality. 5 stars from me!

Great stuff as long as it's kept fresh
It gets extremely bitter, and almost unbearably so, if you leave it on the counter -- but nowhere on it does it say that it's required to be refrigerated after opening.... I haven't tried refrigerating after opening, but I feel like it loses a lot of the great smooth flavors after it's opened. The initial taste is absolutely wonderful, and well worth the money. Quality is excellent - much higher than the usual Kikkoman brand that all the restaurants carry... Has a nice necked-down pour-able top, which is keyway shaped, instead of just a general hole.

Amazing
Absolutely would recommend. The difference is obvious and absolutely worth the price if you’re looking for a high quality soy sauce. Its rich flavor and smooth texture is amazing and could easily go on white rice alone.

Rich flavor and alcohol-free!
Compared to the typical store-bought soy sauces, the quality here is excellent. The flavor is significantly richer and it is actually quite complex. While it does have a slightly higher salt content than I anticipated for a double-brewed sauce, this is easily outweighed by the superior taste. Plus, the fact that it's made without alcohol as a preservative is a definite plus. The main downside, however, is the considerable cost, which I can see being a barrier for many.
