Are the model numbers different because of the different colors? Does it matter if I get the red one or the yellow one for 105 cleats?

Rose Red..........Does not come with Allen wrench. It requires a basic 4 millimeter......which is on most multi tools

Do these cleats come with the hardware, i.e, spacers and screws?

Yes......as far as I can tell it is a standard Shimano package with screws an spacers....
