Q: If it's not compatible with your camera, can you still use it's basic functions as a gimbal?

I would think so but you will have to touch the camera to change settings and push the record button

Yes, you can put anything on it so long as it has some significant weight to register it. The ZV1 should be just fine, but you need to make sure it’s properly balanced before you start it. Centre it on the slide plate, Tilt Axis, Roll Axis, Turn Axis, that’s the order I do it.
