Q: what is widest separation they will handle-My tandems are 8 1/2" apart?

That full opened, it is 10 inch they will open. 8 1/2 inch would be at the max for them to have good holding power.

Q: Is the x-chock wheel stabilizer lockable? that is, with a lock of some type?

Ours say Lockable with the optional 28015 Pad Lock - Which I have not located yet.

Q: Does this work as good on tri axle trailers? Or do you have to use four of these to get the same results?

I Really don't think that you'll need 2 sets, I have put just 1 on one side of my tandem and WOW it locks it down! I think that just 1 set will do the trick! Happy Camping!
