I have gradually moved over to Jamie Oliver brand stainless steel frying pans from TFal. In my view they’re even better than standard TFal stainless frying pans. They heat evenly, the outsides can be scrubbed brutally to keep them clear of burnt-on grease, and the non-stick linings are still in great shape after years of almost daily use. I also much prefer stainless steel pans to aluminum ones - they have a nice sharp rim that seems to pour better, minimizing grease dribbling down the outside. Of course, you can’t scrub the insides. They have to be cleaned very gently, as is the case with all non-stick linings. But used with a bit of care like not heating anything at very high heat and using at least a trace of cooking oil or fat, they clean up nicely with a soft cloth, detergent and hot water. Of course, you don’t really want to clean the insides too much. That way they retain a bit of "season" - a trace of oil or fat that helps them avoid sticking even better next time. I know some people use non-stick pans to avoid using fat or oil. In that case, Slow and Low works well. (Low temperature, long time) As it does for most cooking. Don’t waste your time and energy with any other frying pans. These work amazingly well and are not very expensive to boot.
