Pan itself is fine but not at all like the photos
The flat, usable area on the base of the pan is *much* smaller (maybe half the size?) than shown in the images shown here and the sides are much shallower. The pan itself is fine but not at all as advertised.

Built like a tank
Thicker than the De Buyer pans, so takes slightly longer to heat - and then retains that heat very evenly and for quite some time. Out of many fry pans I own, of various materials and gauges, this is the heavyweight champ. Take your time scrubbing it when new and don’t rush seasoning it - allow it to season and patina naturally over time and put it in your will as it will outlast you.

Small cooking surface
A well constructed pan but the actual cooking surface is only around 7" for an all rounder pan based on this trend I would reccomend the 11 7/8" or 12 5/8" pan of the same line.

Smaller than it looks on Amazon
I bought this 9.5 inch carbon steel skillet because Matfer Bourget is know to make quality skillets. I intended to cook two eggs, or two burgers at a time, but when I got the package I was surprised how small the box was, and wondered how they got a 9.5 inch pan into it. When I opened the box I took out a pan that looked more like a 8 inch skillet. There is only enough room in the bottom of the pan for one egg, or one burger. The widely flaring out walls is what makes it 9.5 inches. The actual cooking surface is very much smaller. No way you can fit two large eggs in there unless you crack one on top of the other. If you need to cook two eggs, I would go one size larger.

Great Quality
Says what it does on the tin. Extremely solid and heavy, but delivers a great 'cuisson'.
