Can this be setup for the right shoulder to access my CCW with my left hand?

I just bought this back with the strap for the left shoulder. It worked for me being left handed. If you swing the bag towards the front underneath your right arm pit, the ccw zipper is right there on the top to access the firearm with your left hand. So this bag works perfect for me personally.

Can this bag fit a 15in. (diagonal) macbook pro

I really doubt it. My Macbook Pro 13" from 2015 is already 12.4 x 8.6 inches.So I really doubt your Macbook Pro 15" could fit !!

How large of a hydration bladder will this accept?

And now, an answer that is actually helpful. On the Maxpedition website they state that the Sitka Gearslinger wil accept a "100oz/3L hydration reservoir".

Can the Maxpedition Sitka carry a Macbook Pro 13 or 15 inch?

13 inch pro would fit (my 13 inch air fits). A 15 inch may fit but it would be tight, but I wouldn't risk it.
