can this be used at room temperature?

We add the pectin to sugar at room temperature and then this goes into the hot jam liquid. Hope this helps.

Hi Chris If your about to order some pectin it should have a good date ,As I bought mine last year and the exspire date is 02 -2019 .Hope this helps Ingy

Will this product work for no-sugar jams sweetened with stevia or the likes?

Don't see why not. It's pretty good setting agent you definitely need to use more than they recommend. I tend use less sugar more fruit and it works fine.

do you still use jam sugar when using this pectin

Jam sugar has pectin added, so if using pectin powder you can use ordinary granulated sugar. Many jams do not need additional pectin and can be made with granulated sugar because the fruit ingredients contain significantly high levels of pectin naturally (eg apple) however some fruits (eg strawberries) will not achieve a set without pectin, from jam sugar, pectin powder or from home made pectin syrup.

Brilliant

Brilliant for low pectin fruit that requires jam sugar which is very expensive next to granulated. Just add as much as you need to quantity of fruit and this pectin provides a very good set.
