Q: Will this keep cold beverages cold for lengthy periods like more 6-8 hours?

I have experience with this air pot in keeping hot liquids hot and it does a great job of that (6-8 hours) so I believe it will do the same for cold liquids.

Q: Is this lined with glass or stainless steel inside? (hoping glass)

It's lined with stainless steel.

Q: has anyone used this to serve apple cider ? considering it separates ?

I have not used it for that but what a great idea. I'm sure that would be great even Hot Coco!!!

Q: How do I close up the level/pump when done using?

You do not have to put the pump handle down every time you are done with pumping water. Leaving it up won't let air in or out. You close it down only when you need to take the whole cap out to pour in boiled water.
