High Quality
I bought this thinking I could make a gel on it, but I had to work with it for some time to learn how to create it. When it dries it is very hard, but if you strain out the solid chucks and then set, it allows for a more mailable gel. This is the highest quality Carrageen on the market due to its small and delicate grain size. Its quality is high.

Great quality product for vegan cheese making
I'm just beginning to experiment with making vegan cheese. The recipe I used called for agar agar, but said carrageenan worked well, too. When I found this particular carrageenan and saw it was a Maine product, I gave it a try. (Supporting my neighbors! Win!) The carrageenan is a fine powder and dissolved perfectly in the cheese recipe. It set up well and produced a very firm and tasty block cheese. The first recipe I used it in was for smoked Gouda. I'm trying it next in a cheddar block. Very happy with the results so far and plan to purchase more as my cheese making progresses.

Great for making vegan cheese that is much like regular cheese
I used the kappa carrageenan this past Sunday. I made vegan mozzarella cheese. The recipe I used is on Pinterest and it named this product and was the reason I purchased this item. Guess what? I loved the cheese! I attribute the cheese-like qualities to this kappa carrageenan product! It was a lot of fun to make. I made a home made pizza and was able to shred and slice the vegan cheese 4 hours after making it! It tasted great from the moment all the ingredients came together and only gets better after a few days. Great fun, I plan to try this product for other cheese recipes, including the ones that call for agar-agar.

Vegan cheese!
I use this to make melty gooey vegan cheese and it works great. It is a natural product as well.

It seems fine. I have only used it once. I have read that carageenan is not too good for you, so do not plan to use it all the time. But, in my vegan cheese cookbooks, it was recommended as a good solidifier for home-made vegan cheese. My test batch came out OK. Think it could have been firmer, but I will try again. Maybe I did not follow the recipe carefully enough.

Vegan Mozzarella SECRET INGREDIENT- I can finally make a decent vegan pizza!
This is the secret ingredient store bought vegan cheeses don't want you knowing about. While vegan grocery options have boomed beyond anything I could ever hope in my lifetime, they either do not taste so great OR they taste great and are super expensive. I am a vegan for the animals only, therefore, I am a vegan for LIFE. I want to be able to make pizza, lasagna and a whole bunch of other dishes with "cheese"...enter the great Kappa. Kappa God. God of vegan cheese...Kappa Carrageenan....THIS. IS. THE. SECRET. Item came securely wrapped and in good condition. Item works as described. Will buy again. And again. And again. And again.....
