How I used the sauce to recreate a favorite Hawaiian dish.
This sauce is wonderful. I have fond memories of eating char siu chicken in Hawaii and this is the closest I have come to replicating that memory. I added a few tablespoons of this sauce to 6 boneless/skinless chicken thighs and vacuum sealed them. I then squeezed the mixture in the sealed bag to fully coat the chicken and set the package in the refrigerator overnight to marinate. The next day using a sous vide cooker, I set the temperature to 145 F (and cooked the chicken in the sealed bag for at least an hour to make sure the chicken holds a temperature of 145 degrees for at least 10 mins while cooking). Cooking at an internal chicken temperature of 145F for 10 mins is equivalent to cooking to an internal temperature of 165F. However the chicken will be much more moist. Once done with cooking the chicken, open the sealed bag and using kitchen tongs, arrange the chicken thighs on a cookie sheet. Set your oven to broil. While the oven comes to temperature, baste the chicken thighs with fresh char siu sauce, and then broil the chicken for approximately 5 mins to caramelize the glaze on the chicken thighs. Serve with white rice and a vegetable of your choice for an easy, flavorful, dinner.
