I believe the servo is a Tower Pro, Mg995

Q: What is the degree of rotation for the pan and tilt?

The pan and tilt is able to rotate 360 deg freely, but with the motors attached, as shown in the figure, you can see it won't go all the way through...If you are asking about the servo, it only rotate a little more than 180 deg. There is a webpage teach you how to convert it to continuous rotation motor (I haven't try it myself) http://www.instructables.com/id/Convert-Towerpro-MG995-servo-to-continuous-rotatio/

Q: What are the pin assignments for the 3 colored wires?

use a transformer with 2 'wires', check them for approximately 3 - 5Volts There may be some differences with the colors of the servo wires connect either brown or black to the power transformer and test the servo with the other 2 wires - one of the 2 at a time A multi-meter can help identify which wires should be connected

Q: Does this kit come with the aluminum round servo horns?

It comes with the horns but the ones I got were plastic.
