Q: Can the lid with spring be washed if it gets dirty, or will the spring rust if it contacts water?

It can be hand washed but doesn't get wet or dirty when pressing tofu.

Q: What is the maximum and minimum quantity (volume) of tofu or paneer that can be pressed in this?

The press takes a regular sized piece of tofu (approximately 5" x 4" x 1 1/2" inches.). As for paneer, it has been a while since I've made it, but I think it might take the curd from approximately 1/2 gallon of milk- but don't hold me to that! BTW -I love this press. It's adjustable and does the job quite well and so much easier than trying to stack and balance cast iron pans or bricks on top of the tofu brick or curd to extract the liquid.
