How do you remove the glue between the layers? I only need one layer. I was able to pull them apart but can’t remove the glue.

If you remove the top layer (brown) you can use the glue side to hold it in place in your shoe. It's just carpet tape and will wear off. Or you can pull it off if you don't want it. I use the other layers so I have 6 in all and find double sided carpet tape works well.

I wear a ladies size 6. What size should I Order?

I wear size 7 1/2 shoes and I ordered the small. They fit prefectly!
